# Pastries, Croissants & Danish in Waynesville, NC

## Scratch-Made Pastries from Farm to Cake Bakery

At Farm to Cake Bakery, pastries are made the way we believe they should be made: from scratch, in small batches, with real butter, cream, eggs, fruit, chocolate, and carefully prepared fillings.

Located in Historic Hazelwood in Waynesville, North Carolina, our pastry case changes throughout the week with freshly baked croissants, Danish, fruit hand pies, cinnamon rolls, éclairs, cream puffs, and other seasonal pastries.

We are not a bakery built around mixes, buckets of premade icing, or shortcuts. Our pastry program is rooted in traditional baking techniques, thoughtful preparation, and the simple idea that good pastry begins with good ingredients.

## Croissants Made with Real Butter

A good croissant should have a crisp, flaky exterior, delicate layers, and a soft buttery interior.

Our croissants are made with laminated dough—a traditional process of carefully folding butter into dough to create the layers that expand as the pastry bakes.

It takes time, temperature control, and patience. There is no quick substitute for properly laminated dough.

Depending on the week's offerings, our pastry case may include classic butter croissants as well as filled and specialty croissants.

The varieties change, but the foundation remains the same: real butter, carefully prepared dough, and small-batch production.

Danish Pastries Made From Scratch

Our Danish are another part of our laminated pastry program.

The dough provides the buttery layers, while house-prepared fillings, creams, fruits, and seasonal flavors give each pastry its own character.

Rather than producing the same assortment every day of the year, we let our Danish selection change with the season and with what we are making in the bakery that week.

That means a visit to Farm to Cake may bring something familiar—or something completely different.

## Pastry Is More Than Decoration

**Beautiful pastry matters, but flavor comes first.**

Behind every finished pastry are the less-visible parts of scratch baking: mixing dough, laminating, proofing, preparing fruit, cooking creams and curds, making fillings, portioning, shaping, baking, and finishing.

Those steps are what create the texture and flavor of the finished pastry.

Our goal is not simply to make something that looks good in a pastry case. We want it to be worth eating.

## Fruit Hand Pies

Fruit hand pies have become one of the pastries strongly associated with Farm to Cake.

We make the fillings from **real fruit cooked in small batches**, then wrap them in our signature **flaky, buttery pie dough**. The result is a true little fruit pie—rich, tender, and easy to enjoy without a plate and fork.

Flavors change throughout the year with the seasons and our weekly bakery offerings, so there is often something different in the pastry case.

They are made for the person who wants a piece of pie without needing a plate and fork.

Traditional Pastry in a Modern Scratch Baker

Today, our pastry program sits alongside our artisan sourdough and fresh-milled bread program as one of the foundations of the bakery.

You'll find traditional techniques mixed with seasonal ideas and the occasional pastry that is simply too good not to make.

That might mean a classic butter croissant one week, a fruit Danish the next, or a pastry created around something fresh and seasonal.
